This easy Chicken Piccata recipe has the delicious flavors of lemon, garlic, capers, and white wine. No need to go to an Italian Restaurant to have this classic Italian dish, after you see just how simple it is to make at home.
Chicken Piccata
Ingredients
3 or 4 boneless skinless chicken breasts
1 cup all purpose flour
1 Tbsp olive oil
4 Tbsp salted butter
juice from half of a lemon (about 2 Tbsp)
2 garlic cloves minced
2 Tbsp fresh parsley
2 Tbsp capers
1/4 cup white wine
1 cup chicken broth
salt and pepper
Instructions
Cut the chicken in half length wise. Season each piece, on both sides, with salt and pepper. Dredge chicken in flour and shake off excess. Add olive oil and 2 Tbsp of butter into a large skillet and heat until melted. Add floured chicken into the hot oil and butter and fry a couple of minutes on each side until lightly golden brown. You may have to fry in batches. Remove chicken and place on a plate. Add garlic and capers to the same skillet. Then add white wine and cook until liquid reduces and skillet is almost dry. Add chicken broth and then place chicken back into the skillet, cover and cook for 10 minutes to ensure chicken is cooked through. After 10 minutes remove chicken and place on a clean serving plate. Add a couple Tbsp of chopped fresh parsley and allow liquid to reduce again slightly. Then turn of the heat and add 2 Tbsp of cold butter one at a time to liquid, slowly stirring to give a silky smooth sauce. Spoon sauce over chicken and serve with pasta, rice or mashed potatoes.
