This moist cake has all the flavors of Christmas; ginger, nutmeg, cinnamon, and cloves. It's topped with a delicious cream cheese frosting and chopped pecans. When you pop this loaf in the oven, your entire house will smell like the Holiday's! If you're expecting guests, bake it and in an hour or so the aroma will make them feel warm and toasty no matter how cold it is outside.
Gingerbread Loaf
Ingredients
1/2 cup butter
1 cup sugar
1/2 tsp vanilla extract
1 egg
1 cup applesauce
1 1/2 cups flour
1 tsp baking soda
2 tsp ginger
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp clove
Cream Cheese Frosting
4 oz. cream cheese
1 1/2 to 2 cups powdered sugar
1 tsp vanilla extract
1/2 cup chopped pecans (optional)
Instructions
In a large mixing bowl blend butter and sugar together until creamy. Add vanilla, egg, and slowly blend in the applesauce. Add flour, baking soda, and spices. Mix until combined. Pour into a greased loaf pan. Bake in a 350 degree oven for 45 to 50 minutes or until a toothpick comes out clean. To make frosting, blend cream cheese, powdered sugar, and vanilla until creamy. Spread over cooled cake. Top with chopped pecans.
