This recipes comes from an old Taste of Home cookbook that I found tucked away. It is a recipe I am so glad I came across because I forgot just how much we loved this hearty and comforting dish. The bacon and kielbasa sausage provide rich flavor to this satisfying stew.
Kielbasa Skillet Stew
Ingredients
1 to 1 1/2 pounds smoked fully cooked kielbasa, thinly sliced
4 slices of bacon, cut into small pieces
2 cans (15 1/2 oz.) great northern beans
2 cans (8 oz.) tomato sauce
1 cup onion, diced
1 cup green bell pepper, diced
1 cup carrot, diced
2 garlic cloves, minced
1 tsp dried oregano
1 tsp dried thyme
pinch of salt and pepper
Instructions
In a large skillet, cook bacon until crisp. Add the sausage, onion, pepper, and garlic and cook until the onion is tender. Stir in the remaining ingredients, bring to a boil. Reduce heat, cover and simmer for 30 minutes or until vegetables are tender, stirring occasionally.
