Shotgun Shells


Ingredients

1 box manicotti shells

1 pound ground beef

1/2 pound Italian sausage

4 oz. cream cheese

2 cups shredded Colby Jack cheese

1 egg

1 jalapeno pepper, finely chopped

1/2 onion, finely chopped

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1 to 1 1/2 pounds bacon

barbecue sauce


Instructions

1. Preheat oven to 300 degrees and line a baking sheet with aluminum foil.

2. Place a wire rack on top of the baking sheet tray. Set aside.

3. Mix all ingredients in a large bowl, except bacon and barbecue sauce.

4. Gently stuff uncooked manicotti shells from both ends, making sure there is no air pockets.

5. Wrap bacon around each shell covering the ends.

6. Brush barbecue sauce over both sides and place on prepared baking sheet tray.

7. Bake for 60 minutes, then flip shells over, add more barbecue sauce, and bake for another 60 minutes, or until the bacon is nice and crispy.

8. Remove from the oven and enjoy.
